I got this recipe from one of the Tattu Kadai’s in Coimbatore.Tattu Kadai are the road-side tea shops.These would be open only in the night and they serve delicious idly,dosa and parothas.So this kurma is a side dish for the parathas in these shops.
Ingredients:
Onions – 1 (cut in to small pieces)
Tomato – 1-2 (medium sized)
Green chillies – 2-3
ginger- garlic paste – 1 tsp
Salt
Cloves – 2
Cardamom – 1
Bay leaves – 1
Pepper corns – 2-3
Cinnamon – small piece

Pour little oil in kadai.Add the Cloves,cardamom,bay leaves,pepper corns and cinnamon.When they get a nice aromatic smell,add the green chillies,onions.Saute it till it turns golden brown.Add the ginger-garlic paste.Add the tomatoes and slightly mash it.Mix everything and make a gravy.No need to add water or coconut paste as tomato makes a paste itself.If you think masala is less,add garam masala powder.Goes well with chapati and paratha.

Bisi Uppinakayi is a spicy and tangy tomato curry from Andhra.As my grand-ma was from Andra, she used to prepare this regularly.

Ingredients :
Tomatoes – 4 (juicy and riped well , chop in to small pieces)
Oil – 3 tsp
Mustard seeds – 2 tsp
Tamarind Juice – 6 tsp
Curry leaves – 5-6
Cilantro – 2 sticks ( finely chopped)
Rice Powder – 2 spoons
Salt
and Masala Powder
Ingredients of Masala Powder (Dry roast everything and make a fine powder)
Dry Red Chillies – 7-8
Mustard seeds – 2 tsp
Fenugreek seeds – 1 tsp
Take a pan.Add oil,mustard seeds,curry leaves and chopped tomatoes.Let the tomatoes boil for 5 minutes.Add
the masala powder,hing and tamarind juice.Add water and boil it for 15 minutes or till tomatoes become soft.
Mix the rice powder with water and add it to the boiled mixture so that its not too watery.
Decorate with cilantro and server with rice/chapati.

Chapatis are good for health and if you are on diet docs surely advise you to have chapatis instead of rice.Making soft chapatis requires time as well as patience.Preparing a soft dough is important while making chapatis.

Chapati
What you need is
Atta – 3-4 cups
Oil – 2 tbsp
Salt – 2tbsp
Sugar – 1/2 tbsp
warm Water – 3 cups
Mix the atta [ 2 cups] with 2 spoons of oil,salt and 1 spoon of sugar. Add sufficient amount of warm water.Knead it till it becomes soft and is not sticking to your fingers.Keep it aside for 1-2 hours.Make small round balls and roll it on the chapatti stone. Now add 1 spoon of oil on top of it and fold it in a triangle shape the way it has been shown in the pic.Again roll it and make a triangle chapatis. Bake it on a medium flame.

Akki roti is basically a north karnatka dish.Easy to prepare and good for health also.

Ingredients :
Rice flour – 4 cups
Maida flour – 4 tbsp
Onions [chopped ] – 2
Green chillies- 3-4
Grated coconut – 2 cup
Jeera – 1 tbsp
Corriander [finely chopped] – 1 cup
Salt
Mix all the above ingredients with water and make a fine dough.
Then make small balls of it and roll it on tawa using fingers.Bake it like chapatis by adding little oil.
Always we should make rotis using hand then only it tastes real good.
